Nigella's salt and vinegar potatoes

Is there more to it than crispy roast potatoes sprinkled with vinegar? (They do sound delicious)

Do they not just taste like chips then?
Potatoes, hot oil, salt & vinegar….

I put vinegar on roast potatoes once and they were horrible. I thought they would be like chips, but no.

I've seen Jamie Oliver use vinegar on potatoes, he sprays it on using a...spray bottle. I think it helps to crisp up the edges. I'd forgotten about it and used my vinegar/water spray I use for cheating and it does work!
