I’m going to make homemade chicken goujons, should I brown the panko first? I’m baking them so I’m hoping they won’t be soggy

I never do. I don't eat egg so I do flour, (pb) milk then panko. If baking the whatever it is, they don't brown massively but obv do if frying.

I never bother browning. Naturally quite crispy rather than soggy

I make panko from brown bread, I think it looks more appetising.

I've only just discovered panko. How do you make your own? I bought a packet Blush.

I dip chicken in flour first then egg and finally panko. I add chilli flakes and paprika to the panko.

To make panko, use stale bread ( I prefer brown), remove crusts & turn into breadcrumbs. Spread out on baking trays etc & place in the oven on the lowest heat. Takes 20-30 minutes, turn over halfway. When really crisp, leave to cool & put in air-tight container. Keeps for months at ambient temperature.
