I have a big bastard of a smoked trout

And he keeps staring at me every time I open the fridge. I purchased him (I've named him Glen) during an online shopping jaunt at 1am after drinking too much. He was supposed to be much smaller.

I love smoked trout but Glen is BIG- what can I do with him? All I ever do is trout pate, trout on cold toasts/crackers with cream cheese., appertisers/starters as it were.

Maybe pasta? Pizza? A little bit of Glen will go a long way so I'm struggling with how to eat him. WWYD?

Trout pâté will freeze so if you just blitz him up with your usual stuff you could have a year’s supply in small portions?

Wonder if you could use him in a kedgeree type dish instead of haddock?

A couple of years ago we had some lovely pizzas which were - sourdough base, white sauce base, cooked baby potatoes sliced on top, cooked asparagus tips on top and smoked trout bits. If you want to recreate it, it was yummy! We made our own version once - bought pizza base and made white sauce - add parmesan to make a thick white cheesy sauce.

I love smoked trout, I sometimes make watercress soup and then flake hot-smoked trout on top, also a smoked fish platter (hot smoked trout, salmon and mackerel) with a roast beetroot salad, Scandinavian cucumber salad and potatoes with soured cream and dill.
