What should I serve as a side dish to stuffed peppers?

Just that really.
Love a stuffed pepper. Make them with mixed grains, spinach, cashew nuts and feta cheese so they've got quite a good amount of stuff in them but it just doesn't feel like a meal, and really needs something with it. Any ideas?

Maybe some sort of flat bread/garlic bread.

Sorry, personally I would see the stuffed peppers as a side.
(Although I wouldn't eat them anyway)
If the meal is just for you, then you could probably eat it like that ?
Pork chop ? Sure I've seen that somewhere.

Salad! Rocket and crunchy green leaves, drizzled with good olive oil, sea salt, and maybe a squirt of lemon juice.
Or if I was feeling decadent, chips. Grin

It's for me and 2 kids (8 and 10). They also loved stuffed peppers so that's not an issue.
We wouldnt eat meat with it, which limits things a bit.

A flatbread is a good shout Maybe a garlic, cheese and tomato bread would be yummy. Would usually have a bread with something saucy but I'll stick some oils and vinegars on the table. Was just seeing if anyone could come up with something I wouldnt usually think of.

How about a slice of quiche, a green salad, coleslaw, garlic bread, samosas, meatballs (veggie ones if you prefer)

Treat them a bit like tapas so a potato side dish, fried gnocchi, mini roasts or patatas bravas . Brocolli flash fried with garlic or broad bean salad.

roast potatoes & green beans/peas or tiny new potatoes with butter/lemon, and a nice salad. or skinny fries/wedges & a nice salad. Pepper sauce too.

I love a stuffed pepper! Have ours with sautéed potatoes and a salad in a creamy dressing. Delicious!

Greek roast potatoes! Cut potatoes into wedges, then add olive oil, salt, oregano, black pepper and cumin. Spread on a baking dish then add water and orange juice until the liquid is about 2cm deep around the wedges. Place some Bay leaves under the liquid then roast for 45m to an hour. Sprinkle with fresh chopped parsley and lemon juice to serve.

You said you already have grains in the peppers, so I don't see that you need rice, couscous or potatoes as well. A big salad would be my choice, maybe including some cannellini beans or Puy lentils.

Bean/legume based dip/flavoured hummus and crackers or toasted flatbread.

Do you eat fish ? We do ours with baked salmon. Or could do with slices of fried halloumi ?
