Portable Christmas side dish

We're having an early Christmas celebration next month with family we can't see around the holidays and we've been tasked to bring a side dish to a chicken roast.

What's a good thing to bring that can travel for about 1h in the car?

Spiced red cabbage. Can be cooked in advance and reheated there (in the microwave). Lovely festive spiciness.
Do a whole head of cabbage and freeze (whatever isn't taken to the celebration) for later use.

Stuffing or Parsnip gratin recipes.sainsburys.co.uk/recipes/parsnip-gratin - I’d bake it before hand as suggested and reheat as per instructions

Shredded Brussels sprouts fried with pancetta - east to reheat in the microwave. I used this Jamie Oliver recipe www.jamieoliver.com/recipes/vegetable-recipes/brussels-with-hustle/

It’s an hour - everything is easily transportable in that time frame surely even the chicken would still be warm if you wrapped it

Red cabbage as suggested, or this root veg mash with crumb topping is gorgeous.

Oh yes I'd go for a fruity red cabbage, cook in the slow cooker and leave in the pot as you travel and decant at the last minute.
