Rice question

I need help!

I'm cooking a rice dish that requires using cooked rice that's been refrigerated then added to a spice mix to make a fried rice. If I use the Chilled rice it won't be able to be reheated again will it?

I wanted to make this dish for my OH to take to work for a more interesting lunch snack.

That's how you make egg fried rice. As long as its stored correctly in the fridge after cooking it should be fine to reheat once.

I'd eat that kind of dish cold at lunch time. In fact I did exactly that yesterday. Left over chickpea and green bean pilaf.

It's fine to reheat so long as it's stored properly - people outside Europe have done this for decades.

Absolutely no expert, but whenever I do egg fried rice or similar like this, I make sure to cool and chill the rice as quickly as possible at the first stage, to reduce risks (bit nebulous!). I spread it out over two wide flattish dishes, and sometimes put them standing in cold water to aid chilling, and gently move the rice around to cool it quickly enough to be able to get it in the fridge.

OP the food poisoning issue with rice is that it needs to be COOLED quickly - so once it is cooked, spread it out thinly on a food try or similar so it's cool enough to go into the fridge. The spores develop whilst it's at room temperature, and it doesn't matter if you subsequently "nuke" the cooked rice, it will already be toxic.

So in other words what you DONT want to do is make a large pot of rice and then leave it in the pot to take ages to cool down.

Thankyou all so much for your replies. I'm really cautious with rice, I've decided to just cool the rice quickly (rather than cool it and refrigerate it) with water then fry off in the pan.

Im pretty sure Mr Boomchika will eat it cold anyway. I just hope it turns out ok. I'm making The Curry Guys Coriander and Lime fried rice 🤤

I can categorically say that I've never cooked rice/re-heated according to the 'correct' method.

Don't cool it with water, it will be too damp to make fried rice. You need to refrigerate it, because it's dries it out and makes perfect fried rice!

I cool ours with cold water run through a seive. I then put it in the fridge for a couple of hours before frying

I didn't need to worry about anything. What I made was demolished anyway! Even the picky kids tucked in to it!

Looks like I'll be making another batch very soon. I used The Curry Guys recipient for steamed rice then made the lime and coriander paste to fry it in and it was delicious even if I do say so myself!
