How do you make your steak sauce?

If you do make it?

I've always made steak sauce the was my mum taught me - deglaze the pan with alcohol, usually red wine but whiskey/brandy/even tequila works, let it simmer then add pepper - ideally cracked black pepper - and a teaspoon of whatever mustards you have handy (usually 2/3), cook down then at the end stir in some cream. It's delicious but I'm the only one in my house who like (any kind of) sauce with steak.

Occasionally I buy a ready made one but these aren't as good. I like more sauces EXCEPT mushroom - hit me up please!

Damn it! I was all ready to give you the recipe for Piquant Steak sauce from my ancient Dairy cookbook. But it is heavy on the mushroom so I won't!

I should have been clearer btw that the only issue with my current recipe is it's basically impossible to make a 'small' portion and therefore it's a bit of a waste not really really I eat a double portion

I do mine the same....pan juices, alcohol, cream, S&P, and a generous shake of Lea&Perrins.

If feeling fancy then I do a bearnaise, but dh doesn't like that so its a pita for just one.

Pan juices, blue cheese, cream, few drops of Lea and perrins Grin simmer until thick, so good and for chip dipping!
