Vegetarian Sandwich Ideas

Apologies if this has been done before.

Does anyone have any vegetarian sandwich / wrap ideas (for a reluctant cheese eater...they do eat cheese but would prefer a break from it occasionally)?

Not forgetting the classic crisp sandwich!

Dairylea cheese spread and walkers cheese & onion crisps mmmmmmm. Haven't had that in a few years but now I want one.

DH is vegetarian but used to be vegan. I was just thinking of a 'club sandwich' i made for him. (club sandwich is a loose term)

basil tofu (you can buy them ready basiled and cooked in avacuum pack from some stores) with lettuce, fresh sliced tomato, vegan mayo an black olives.

Spread both slices of bread with mayonnaise, and on one side spread a little mango chutney. On the other I spread a little Malaysian chilli paste thinly because I have some in. If I didn't have any I might use a spicy relish instead of the mango chutney. The slight spicy kick is what I like about this.

Now add some hard-boiled egg, sliced or chopped up a bit, and sandwich. Big favourite of mine at the moment.

Mashed avocado with lime juice, chopped walnuts, rocket and chilli flakes
Cream cheese with matchsticks of carrot and cucumber, rocket and iceberg, salt and pepper. Way nicer than it sounds and doesn't taste of cheese.
flavoured humous such as beetroot or red pepper
spicy bean salsa with iceberg in a wrap
Mushroom pate with fig chutney on walnut bread.
roast mediterranean veg with tahini sauce and lettuce in a wrap

Tapenade (look for one without anchovies) sliced tomatoes (vertical or horizontal makes no difference for this!) sliced hard boiled eggs, shredded lettuce, mayonnaise for dipping if liked. Make with thick white bread, all the flavours of Salade Niçoise.

Are you Australian? My utter favourite thing about Australian sandwich places is the tinned beetroot! I replicate them here all the time and everyone around me boaks, but they have no idea what they are missing.

Yep, you got me, Australian here. Tinned beetroot is awesome in salad. Especially mixed with feta so it makes its own creamy pink dressing.

Though I'm not so Australian as to add pineapple. That happens the further north you travel, luckily I'm well south!

Put thinly sliced celery in any sandwich. As unbelievable as it sounds, it adds a great taste

This is an excellent idea. What a great umami bomb.
