My food/cooking inspiration has vanished Grin
Easy meals required - I live alone and don't want to be really buying ingredients I won't use again. I eat anything except pistachios, offal and lamb and have a fairly well stocked kitchen!

I usually batch cook pasta bake, beef stew, corned beef hash etc but I'm fed up with food Confused

Favourite simple meal Sausage, egg chips, beans Scotch pie, chips, beans Potatoes and corn beef 😜😜 All severed with thick buttered white bread and a mug of tea.
I actually have corned beef hash in the freezer to go with pickled red cabbage and buttered bread!

I eat loads of chicken and turkey mince.

Made bolognese style with red lentils, baked under cheesy mash crust.

Mini meatballs with garlic and Parmesan simmered in broth with carrots and celery and small pasta like v simple Italian wedding soup.

Or in mixed with dried tarragon and mayo and lots of pepper and cooked as burgers. Eat them with lettuce instead of bread.

Current favourite is as a rice bowl. Stir fried fast, garlic, ginger, spring onion and chilli thrown in at the end. Splash in a tbs each of kecap mani & dark soy. Over jasmine rice and lots of green veg, with a bit of coriander / lime juice if it's in.

When I'm cooking for just me, I tend to do things like a grilled or fried steak/chop with whatever vegetables or salad I feel like. If I'm feeling adventurous I'll make a more elaborate accompaniment and if I'm not I'll boil some potatoes and cook some frozen peas!

I quite like lunch that's not a sandwich and am generally making that for myself so on the lighter side, things I do regularly include:

Roasted tomatoes and onions and garlic on couscous with feta cheese

Fried halloumi and I add garlic, lemon and honey when it's almost cooked to create a caramelised "sauce" then I eat it in a wrap or flatbread with spinach.

Soup

Fry bacon and onion on spaghetti.

Fried mushrooms on sourdough.

Lentil Daal - and then I roast whatever veggies I have left in my fridge and chuck them in too!
