Inspiration for mince dish please

I'm in need of something to make for our family tea - 2 adults, 2 toddlers.

I've got a bag of mince (Quorn - so no meatballs/burgers that need it to stick together as I've not managed this) and I need some inspiration. Not lasagna or shepherd's pie though please.

I have a pretty well stocked pantry - tinned tomatoes/spices/beans/lentils etc and frozen veg etc.

I make a blue cheese stroganoff with (beef) mince and it is definitely a favourite in this house. I have never used quorn mince so not sure if it would work but I know soya mince would. (We are not vegetarian but we cook and enjoy a lot of meat free dishes)

We're having tacos tomorrow. Brilliant meal for families I find as you just collect all the bowls of mince-based filling, lettuce, salsa, cheese, sour cream, avocados etc and everyone can have the combo they want.

Try re-posting with the word "quorn" instead of mince.
As you've discovered, the artificial stuff does not stick together.
