BBQ salad and pudding ideas

Can anyone recommend some nice - not too difficult but different ideas for a bbq side salad and puddings to take to a party ?

Eton Mess. Bash up meringues add berries and strawberries and put it in a big bowl sof people can serve themselves. Zero skill required. Bonus points if you can find brandy snap baskets to serve it in. Or are very talented! Fruit skewers with marshmallows is also easy and portable. Serve with Chocolate or caramel sauce for dipping. Have fun 😊

For a side salad I like couscous with carrot batons, pomegranate seeds, chick peas and flaked almonds. A kind of different idea for a salad is spanakopita - easy with commercial phyllo dough.

For a pudding, brownies are always a good bet because they don't require plates or utensils and you can always dress up by adding salted caramel or strawberries. Fruit salad is a safe bet. Carrot cake is good, too, as it's sturdy and transports well.

Watermelon, cucumber and feta with a dressing of lime, chilli and mint.

Roasted veg and couscous works nicely. Use some red or green pesto and olive oil through the pesto. You can top with feta or goats cheese if you like. Alternatively, char grill veg like aubergine, asparagus and courgettes and mix with the couscous. A lemon, yoghurt and tahini dressing drizzled over.

Tomato salad - finely chop a small red onion, chop whatever tomatoes you like into roughly even size pieces (mixed colour tomatoes look particularly attractive but it's not essential). Chop a small bunch of parsley very finely. Mix all together. Add olive oil, sherry/red wine vinegar and generous amount of salt.

A really good green salad is a lovely thing. NOT the green salads of my childhood which were iceberg lettuce, cucumber and (bizarrely) some tomatoes! Grin. I like mixed leaves, cucumber, avocado, spring onion, asparagus if it's in season. I usually de-green it with some pine nuts. Serve with whatever vinaigrette style dressing you prefer.

For dessert, I'd just make a cake.

As many large bananas as you have guests. Split the skins but don’t take them off. Trickle rum into the split (baskets if that’s your ripple of choice), then a sprinkling of brown sugar, desiccated coconut and cinnamon. Wrap in foil and BBQ for 10/15 minutes and serve with dollop of cream of your choice.
