Roasting tin with lid

I’ve gotten myself an enamel roasting tin with lid, after reading good reviews.

Can anyone tell me if I need to marinate chicken in a particular way, using less liquid or fats for example? Are they good for chicken with vegetables underneath?

Thanks

I use mine but take the lid off for extra crispy chicken for the last fifteen minutes of roasting
The lid is good for resting meat as well
I personally don’t roast Sunday dinner vegetables under the meat rack (if you have one incorporated ) as I don’t think they crisp as much well mine don’t but do if I’m doing Mediterranean type dishes with tomatoes and peppers onion etc then it works well

They are great for roasting fish and the lid stops the smell going everywhere in the oven .

Ah ok thanks for the tips. Yes sounds like it would be good for containing the smell from cooking fish.
