I know this was done many moons ago but I need to use up some mince tomorrow. I can if needed pop to the shop but have courgettes, carrots and celery in, some potatoes and a full store cupboard. I did chilli already this week and we're Bolognesed out already this summer. Also not fans of kofte/burger type meals. I'm a big fan of one pot dining but willing to branch out. Can anyone suggest something?

We had tacos yesterday with lettuce cheese guacamole sour cream. I just happened to have the shells in my cupboard. Quite messy they were, but fun.

I'd do a sort of hash - boil the pots, then fry the mince off with the veggies, mix in the potatoes then stick in the oven so it gets a bit of a crusty top, For extra nice-ness, slow cook onions and then mix in/layer on top, Serve with HP. Top with a fried egg if you're feeling really filthy.

My lovely late mum used to make this dish she called Mince Bake Italienne. It was a base of a Bolognese type mince in the bottom of the dish, a layer of thick cheese sauce on top and the piece de resistance .... white bread spread with garlic butter arranged on top at an angle all the way over. Baked in the oven ... delicious!

Use the mince with a tomato based sauce, perhaps add mushrooms too, then use to stuff green/red peppers or marrow. Serve with rice or couscous.

You could make moussaka using the courgette in place of aubergine (obviously it's normally lamb but I'm sure it would work) make sure you griddle/sear the courgette so it gets rid of some of the water, slice lengthways rather than discs or it'll take ages.

Nigella has a lovely meatloaf recipe which calls for lots of onions fried in goose fat with hard boiled eggs in it and covered in bacon. It's amazing.

What is the mince? Beef, pork, chicken?

I have a glut of courgettes currently and did them stuffed with a Thai inspired, pork mince last week. Similar to a Thai larb fillling.

Sang Choy Bow is another favourite for a Chinese inspired meal

Here is a recipe that's good, best way is in slow cooker for 8 hours. Meat is lovely and tender

Brown mince with onion then add to slow cooker with chopped up carrot and beef stock

You can add a little bisto at the end too if you want.

Serve with lots of buttered mashed tatties and some peas

Cheap , cheerful and delicious

Ooh I needed something to get me back into my slow cooker. I've 3 and since lockdown haven't used them at all whereas I used to use them 3x a week! Really looking forward to trying this thank you.
