Easy dinner for 4 adults

Hi, I’m after ideas for an easy somewhat celebratory dinner for 4 adults.

DP is a big eater and takes a bit of filling but will eat most things
DF hates pasta and pizza
DM doesn’t like rice, cous cous or spicy things

I eat everything and just want to plan something quick and easy that everyone will enjoy without taking loads of effort.

My usual go to would be loads of deli meats and interesting cheeses but as I’m pregnant I can’t indulge properly in this at the moment so I don’t really want a scaled down version of this and then feel like I’m missing out. Especially as there’s no wine involved Sad

I’m working most of the day then going for a scan late afternoon which is why we’re going round to share the scan picture and generally get excited together. I’m just really tired at the moment and don’t want the faff of too much prep or cooking. Ideally not too expensive either.

Any ideas?

A friend shared this salmon recipe with me recently and I made it at the weekend when family came over. It’s very simple because it can be prepped in advance and then very quick to cook, but impressive and delicious. I served it with new potatoes and green veg. Sorry for small print- it’s a photo but hopefully you will be able to enlarge it enough to see it.

Actually, I can see the quality isn’t good enough to read. It’s oven cooked salmon With a topping of feta, pine nuts and herbs. Let me know if you’re interested and I can type it out for you.

Roast Chicken with a roasting juice gravy. Baked Potatoes. Bread sauce to dollop on the potatoes. Lots of lovely veg (I would do carrot purée, roasted green beans and roast cauliflower, personally).

Slow cooked leg or shoulder of lamb
Chopped salad with sumac, tomatoes, cucumbers, peppers
Tahini sauce
Yoghurt garlic sauce
Flatbreads
Chips (to be really authentic!)

All can be made in advance except the chips - the lamb can be marinated in the fridge for days, put in the oven 6 hours ahead and sit there all day. Wrap the flatbreads in foil and warm in the oven.

Steak pie, roast potatoes and steamed veg.

Large pack of stewing beef, 2 oxo, a Tesco red wine stock pot and 2 sliced onions banged in a slow cooker the day before with 3/4 pint of boiling water and 2tbsp corn flour mixed with a little cold water and salt and pepper. Cook on low for 6-8 hours.

Purchase ready made shortcrust pastry, ready made roasties and fresh cauli/broccoli/carrot mix.

Make up the pie, put in the oven with the potatoes at the relevant time, steam or boil the veg. Make additional gravy using what didn’t go in the pie, veg water from steaming or boiling and gravy granuals.

I took this to my mums for Mother’s Day because she didn’t want to go out. Cooking isn’t a priority for her and her kitchen is basic to say the least! I had to add frozen peas for my dad, as it’s not a meal with gravy without frozen peas apparently Hmm

We had cookie dough pie, vanilla ice cream and toffee sauce for dessert.

I’d keep it really simple. Fillet steaks or favourite fish with salsa verde, herb roasted baby potatoes and salad. Quick, simple and tasty.
