Can anyone recommend one? Lots around, but all differ. I can't seem to get canned celery soup anywhere nowadays.

Take 8 celery stalks.

Chuck them in the bin.

Make/open nice soup.

I love celery soup.

celery sticks
large potato
one onion
1/4 teaspoon lazy garlic
Tablespoon butter
Teaspoon oil
4 chicken stock cubes made with 1.2L boiling water
Single Cream
Salt
Pepper

Chop the onion, potato and celery and cook off in the butter, oil and garlic. I add the chicken stock (can sub for veg) I let it simmer for 30 minutes before blending and adding cream. Season with salt and pepper.

You can sub the cream for milk. I don't measure the cream, I pour until it's the right colour.

I always find celery soup needs quite a hefty dose of butter and cream and also a potato, onion and garlic, to bring out the flavour.
Otherwise it's just bland and uninteresting.

I fry bacon lardons with the onion and garlic in butter to start it off, then add diced potato and chopped celery; cook till tender in well seasoned veg or chicken stock, blitz to whatever consistency you like, then add cream and dill to taste. And salt - a fair bit of salt.
