Fajita sauce mix - that you can leave in the oven

Any one know of a Fajita mix you can buy which you can cook up and then keep warm in the oven (without drying out) whilst everything else is done (like putting children to bed!)

Or a recipe for one?

I've stopped using Fajita packet mix because it always tastes over spicy and powdery. Instead I use tumeric, paprika and a bit of cayenne pepper (to taste) - if you smell them, they taste just like a Fajita packet mix. If you put half a tin of tomatoes in with it, it should stay moist - chicken, prawns, onions and 3 colours of pepper are my favourtite.
