Chickpeas and Red Kidney Beans

I seem to have an extraordinary amount of these in the house from my lockdown stockpile! Mostly tinned but a few dried. Other than Hummus and red kidney bean burgers any suggestions? Ideally looking for meals that use these as the main ingredient as opposed to sides. Not too calorific either.

Why did you buy them if you don’t normally use them or don’t know what to do with them?

I normally use red beans for chilli and hummus and chickpeas for a lamb tagine and hummus. we stopped getting through the chickpeas because lamb became a bit expensive. We stopped getting through the kidney beans because the kids started a revolt on daily hummus and had enough for 2 weeks just in case I had a food order missed. I'm thinking the kidney beans we might just get through slowly with a weekly chilli and with the chickpeas some of the recipes above made are almost identical to my lamb tagine without the lamb. I'll take a look at the curry recipes.

I like chickpeas roasted in the oven with olive oil and smoked paprika and then salted and a bit of honey over the top.
I was going to suggest roasting them. Drain them and pat them with kitchen towel to get them nice and dry.

I blend them up and add them to cakes and muffins.

Then I feel slightly less guilty about the amount of cakes my kids eat

I use chickpeas in chickpea and peach curry (from Jack Monroe recipe book) And, yes, channa masala.

I like this store cupboard dinner from The Penniless Vegetarian by David Scott. I think the original recipe says to use tahini, but offers the peanut butter as a substitute.

Sauté an onion.
Add a tin of chickpeas
Add a half tin of butter beans
Add a ton of tomatoes
Simmer until looks like something you’d serve with rice.
Stir in a tablespoon of peanut butter. Season.

This 15 minute Chana Masala is lovely lucyandlentils.co.uk/recipe/chana-masala
I made it the other night with tomatoes from our garden. Makes a vast quantity though, I would say enough for 6-8. Great with brown nice.
