Fussy young eater meal planning

My child is exceptionally fussy although I'm not sure any more than I was when young.

Our meals go something like this -
Spaghetti bolognaise. TV dinner type -frozen item (chicken or fish) with chips/mash peas/spaghetti. macaroni cheese. pasta and sauce.

Then I get stuck...any ideas?

If they like spag bol then presumably not an issue with sauces, and mince. So what about not stretching things too far and doing a mince-based mild curry; mince and peas and a mild curry sauce. Or lasagna. Cottage/shepherds pie.

Jacket potato with beans, or jacket scooped out and mixed with cheese then baked again. Potato wedges as a change from chips. Do they like sausages, kids usually do. That can add in some variety, and you can use chopped up sausages in pasta or as a sausage casserole.

This sounds a bit like DD. We've broadened the variety out slightly:

Meatballs with spaghetti/penne
Lamb/pork chop with mash/potatoes and steamed veg (usually carrot/broccoli/corn/peas)
Sausages and mash with veg
Roast chicken

She loves Yorkshire pudding so I've been able to get her to eat other things sometimes by serving with yorkshire pudding eg a stew or casserole.

Also, what kind of pasta sauce? Because you can vary what's in that if the key is that it has a tomato base for example.

Re pasta sauce eats the red pesto. Ok with cheese and tomato seemingly (because likes ketchup/tomato soup/Mac cheese).

I do a savoury crumble with mince that everyone seems to like - just fry up a simple mince and onions mixture with a matching stick cube and whatever seasonings you like, then top with a crumble mix that replaces the sugar with some grated cheese. Bake for about half an hour.
