What soup can I make?

I eat a lot of soup during autumn/winter. The weather here has been rubbish so I've been fancying it quite a lot.

I've recently made and used up:
Lentil
Tomato
Roasted red pepper

I'm trying to eat seasonally so what other soups can I make? Lacking inspiration. Thanks.

Courgette and coriander, it can be eaten chilled as well

2 courgettes
1 bunch fresh or frozen coriander
1 veg stock cube
cooking oil
boiling water
optional creme fraiche

Slice the courgettes
heat the oil
add courgettes and sweat until the courgettes are starting to change colour
add the coriander, hot water and stock cube
simmer for 10 mins
blend

Serve with a dollop of creme fraiche (without this it is vegan which can be handy if you have an unexpected guest).

Butternut squash and red onion

Peel one butternut squash and three red onions.
Cut into chunks.
Toss in a bit of olive oil and roast at 180 for thirty minutes.
Put in a pan with some stock (veggie or chicken).
Bring to the boil and then whizz until smooth once the vegetables are definitely cooked through.

Miso soup is lovely because you can chuck in whatever you have. I did onion, carrot, sweet potato and cabbage today with some noodles and a bit of leftover tofu & it was so soothing.

Summer garden mixed vegetable soup, ( carrots, beans, cabbage broccoli etc etc). Add some rice or pasta to make it more substantial.

Fresh garden pea soup, can be served hot or try chilled with yoghurt & mint.

Gazpacho, the ultimate summer soup, needs no cooking, try the all green version if you are bored with tomatoes.

Cucumber and yoghurt soup, no cooking just stir ingredients together, serve chilled.

Courgette and pasta is a good summer soup stand by too, use small soup pasta shapes so it cooks quickly.

Greek egg and lemon soup is like eating sunshine, also very easy to make.

Courgette and Brie soup...
INGREDIENTS
450g (1lb) sliced courgettes
2 medium potatoes (about 350g (12oz)), peeled and chopped
1 onion, finely chopped
1.2 litres (2 pints) vegetable stock
225 g (8oz) Brie, remove end rind and cut into pieces
Salt and freshly ground pepper
METHOD

  1. Put all the ingredients except the Brie in a large saucepan.
  2. Cover, bring to a boil and simmer gently for about 15 - 20 minutes until the vegetables are tender.
  3. Stir in the cheese until melted.
  4. Cool a little, then puree in a liquidiser.
Taste for seasoning. Reheat (but don't boil) in a clean saucepan before serving.

Watercress soup is a lovely delicate soup, and worth taking some care over, cook the tough stems first, and only add the tender stems & leaves at the end of cooking.

Lettuce soup is a good way of using up those tough outer leaves you’ve previously rejected, also any odds & ends of greenery, eg rocket & spring onions. Add some potato for body!

Roasted cauliflower and onion,
Roast with salt/ pepper/ , pinch of cumin /olive oil
Soften an onion in oil in the hob
Added Roasted cauliflower and onion
Top up with veg/chicken stock
Blitz and add a splash of double cream ( add more stock if too thick)

Minestrone - I usually add a dollop of pesto to each bowl prior to serving
Corn and coconut
Red lentil, tomato and coconut stew
Onion soup
Chorizo, fennel, tomato and white fish stew
and, my personal favourite - noodle soups (udon, ramen)
