Buy a good curry pastac (Pataks).
Shred chicken, then add to a mix of mayo (Hellmans good) plain Greek yoghurt,squeeze of lemon and a tablespoon of curry paste. Also some sultanas.

Leave for flavours to blend,stirring occasionally and adjust to taste.

Well, google 'coronation chicken' for the full Constance Spry recipe, but

Chopped or shredded chicken mixed with mayo, a little curry powder, little squeeze of tom puree, little squeeze of lemon juice, and if adhereing to wedding buffet recipes across the land, some sultanas.

LOL at 'coronation chicken'...very retro. Has Nigella been making it yet? She did sole goujons the other night, with iceberg lettuce. Looked awful.
