Veg in cheese/cream sauce, not broccoli or cauli!

I'm serving Mary Berry salmon with roast potatoes and want veg in a cheese or creamy sauce to go with the meal. One of my guests doesn't like broccoli, cauli, mushrooms or asparagus.
Any bright ideas please?

Courgettes, get them really brown first by frying in olive oil. One of my favourite things!

Any roast veg, butternut squash or aubergine are very good. Roast cauliflower is also a thousand times better than steamed, if your guest is open to trying it.

What about a celeriac and potato or celeriac and leek gratin. Very easy to assemble and just pop in the oven.

The other option is to do lots of veg and a cheese sauce separately to pour. That's my favourite option.

I do leeks and whatever other veg I've got growing like kale, peas, french beans. All steamed then covered in cheese sauce. Add breadcrumbs, grated mozzarella and pinenuts. Bake until golden.

I’d do leeks or celeriac. I make celeriac dauphinois when I make roast pork because we adore the combination.

Overwhelmed with the response thanks so much. Possibly celeriac might be too much with potatoes but will do that on another occasion.
Green veg with separate cheese sauce as recommended by a few is probably the way to go, leeks is a definite choice.

For those saying ditch the broccoli hater, he is our future son in law. Wedding in 10 days! Apart from his veg choices he is perfect.
