How to use 1kg of walnuts?!

Clearing out a food cupboard I just found a kilo of walnuts bought in a wholesale place 2 years ago. BBE Aug 2020 (insert facepalm emoji). Any suggestions for what to do with them? I haven't a clue! I don't even remember why I bought them, other than 'wholesale fever'!

Nut roast. Coffee and walnut cake (or similar). Pesto made with walnuts. Chuck 'em in muesli.
Should see them off ASAP like that!

chop them up and use them in crumble topping.
also for salads.

They are a year past their best. I think I’d chuck them, and I hate to throw away food.

They've probably gone off. (And I am all one fir ignoring BBE and use by dates!). Walnuts go rancid very quickly and ideally should be kept in the fridge. Taste them. I expect they are very bitter which tells you if they are off or not. I find my go off within a few weeks after opening if left in the cupboard.

I would think most of any sort that old would be manky , try a few before using them in any recipes

I am sure the local bird population would happily munch them for you

If they taste fresh, eat a handful a day; walnuts are very healthy.

They are walnut pieces so not in shell. They were stored in a cool dark place. Is a bitter taste the clue they are off?

Generally not a bitter taste, more an oily stale taste indicates rancidity. It's the papery skins that often taste bitter. Try toasting some in the oven to check for flavour. If they taste ok, they're fine to use.

This is a great recipe. Also if you make the walnut pesto on its own, it's divine with smoked salmon.

You can keep nuts in the freezer and just use them straight from frozen Smile This has saved lots of waste for me!
