Want something nice and fresh for supper. It's hot outside. But can't be arsed with the bbq today. What's your favourite go to recipes for warm weather? Eat most things! But definitely not fancying anything "hearty" like a stew or shepherds pie etc!

Vegetable tart - sheet of ready rolled puff pastry (if you're lazy like me lol), smeared generously with pesto then topped with pepper strips, mushrooms, tomatoes, olives, crumbled feta. Bake in oven for 30 mins or so and serve with salad.

Coriander and lime chickpea salad. This is good enough to eat as a main on it's own, but you could easily add some cooked chicken or sausages, or whatever. Makes enough for 4 people as a main, with leftovers.
3 tins chickpeas, drained. I red onion, sliced. 1 red pepper, finely sliced. 2 tbsp fresh coriander, copped. 2 cloves fresh garlic, crushed. 2 tbsp olive oil. 2 tbsp fresh lime juice.
Mix together, season to taste. This keeps really nicely so we eat it over a few days (only 2 of us)

Bit late but my simple go to summer meal is chicken (thighs no skin or bone are best but whatever you prefer) marinated in lime juice, olive oil and fresh coriander. Griddle n bbq or frying pan (I know you said no heat) but it's really quick.

With a huge tabbouleh salad and I add lots of extras like dried fruit, toasted nuts and loads of different herbs.

I also love oven baked falafel too.

When I was in my chef days we had the CBA salad. Chicken, bacon and avocado. Always a hit and always a sell-out.
We used to think it was great because we used the Cant-Be-Arsed term for it, easy to throw together but so bloody tasty!

Last night was sea bass, new potatoes and samphire in a creamy lemon sauce.

Warm steak strips with salad, blue cheese and walnuts tossed with a mustard dressing.

Homemade nachos or fajitas or tacos.

Hummus, labneh, peppers and flatbreads.
