Batch cooking ideas for summer hols???

I thought as I have free days tomorrow and Thursday, that I might do a load to get ahead for the summer hols!! 🤔 But am now having a blank about what to do??!!
I can do chocolate chip cookies, and a courgette chocolate cake too, but for evening meals I'm at a loss!!! I will make up a batch of beef burgers, and some turkey meatballs, but so people have some other ideas??? TIA xx

I roast big pack of chicken drumsticks or mini chicken fillets and freeze in portions. They could be used for lunch with salad or for dinner with chips, mashed potatoes etc.

I had a revelation when I had a cooking lesson on holiday from the head chef. I am veggie but you can see the joy in this. No need to fry onions and garlic, for example now when making bolognaise, just chuck raw onions, garlic, carrots in a pan with a couple of tins of tomatoes and puree and seasoning with an oxo. Boil it for 20 mins and a lovely thick sauce.

I’d make some marinades, marinate different meat and fish then freeze ready for grabbing out for quick bbq’s.
Pizza dough
Probably a chilli and a lasagne just because they are always handy to have.
A leek and Stilton quiche.
Tuna, sweet potato and chilli fishcakes
Falafel

My answers are probably being influenced by the heat! By next week I’ll be back to soup again!

Ah yes, falafel, love them, I will make a batch! And a quiche too, the children love that!! Also the chicken legs is a great idea too, especially for picnics!!

I make lots of roast veg - it can be used in most types of dishes and salads.

I get my DS to choose which veg he wants at the supermarket and he helps chop (with some bribery) and mix in the oil etc.
It means he's more likely to eat and enjoy it.

Ps the above doesn't always work....Grin

  • lasagne and serve with salad
  • chilli con carne
  • sang choy bow (Chinese style minced meat) served in wrapped lettuce leaves on the day
  • Individual or a large cottage pie frozen in large servings
  • Bolognese, arrabiata or other tomato based pasta sauce
  • Fajita mince/sliced chicken
