What a cliche. Too much courgette

Hi,

I have not grown courgette (zucchini here) for years and now I remember why. We went away for 5 days and that was enough time to grow some absolutely huge ones. Huge. As in close to a foot and a half long.

Yesterday I used up one with "zoodles" and made muffins. The muffins are edible but just barely. Too moist and rather tasteless.

I have just acquired a spiralizer and will use that, but does anyone have fool-proof ways of dealing with giant zucchini?

I sometimes grill slices but honestly no one could eat that much grilled zucchini.

I make this once a week, it's so good. Courgette fritters with poached egg. Great lunch or brunch.
(The recipe serves two, with 4 fritters and one poached egg each, so says 3 eggs but I use one for the fritters and two per person, so 5 in total.)
I also often add extra turmeric or cumin seeds.

I got a massive one that was essentially a marrow in my veg box today. It went straight on the compost. Courgettes are only to be eaten when small to medium imo. Not worth the bother after that.

They are delicious roasted with feta and garlic and then sprinkled with some chopped mint

Or stuffed with blue cheese and chopped nuts and roasted

My Italian mother in law fries courgette slices (and flowers) then layers them with parmesan and mozzarella, boiled egg and tomato sauce. A variation on Aubergine parmigiana. It’s a calorific bomb but absolutely delicious.

So I tried out my new spiralizer and I now have a bowl of zoodles in the fridge. DH is deeply suspicious.

The strips are so long!

It worked but the middle of the squash got cored out and the seeds stuck to the spikes so it was just spinning. I had to keep cleaning it.

I might try them with garlic and parmesan for lunch.

The remaining giant vegetable is being donated to a friend who came here from Greece and likes them grilled.

Thanks again for the ideas. I have also frozen some.

Ok, so the zoodles with a bit of butter, a lot of garlic and some parmesan were delicious. Although I must reek of garlic.

DH had a taste and wrinkled up his face like a toddler. Sigh. But he is feeling not so well today, and he might be more inclined when whatever bug he has goes away.

He wants scrambled egg for dinner and I am going to try the spiralizer on a potato to make a sort of hash brown.

Good without the bacon, added walnuts, add in potato...and freezes well.
