We’re off to a cottage soon, and I’ve booked a food delivery for the first night. Any suggestions for a couple of quick easy meals that don’t need a lot of equipment or ingredients please?

6 adults/teens including a veggie/pescatarian.

I’ll probably bring a veggie lasagna, buy pizzas on the first night, fish and chips and eat out once or twice (lockdown permitting Sad

Easy Indian feast: buy bhajis, samosas, naan, yoghurt and a couple of pickles/chutneys, microwave rice. Then either jars of curry sauce you like and veg/tinned chick peas/paneer/meat or buy ready made.

Pizza and salad is easy.
Lidl Greek week is on now and they do lovely frozen filo things that are veggie. That’s easy to make a mezze with tinned dolmades, olives, houmous, pitta, feta, butter beans in tins etc…
Chilli with jackets/wedges/rice/nachos and bought guacamole, salsa, cheese etc.

Boil spirali, add chopped spinach last minute, drain. Leave pasta in colander; melt in same pan: roulé/boursin with herbs let down with milk or creme fraiche if you want it thinner, return pasta and throw smoked salmon ribbons and chopped spring onions on top. The only heat generated is the boiling pasta. For 3 people 90g pasta, bag of spinach, 1pack boursin, 1 pack smoked salmon. Scale up according to crowd.

Quiches (we like the Higgidy range) with green salad
Hot dogs or burgers
Salmon fish cakes and green salad

Stir fry with straight-to-wok noodles, a packet of prepared stir fry veg, shop-bought sauce and either tofu, edamame beans or quorn pieces.

Baked potatoes with mixed fillings for people to choose from.
