Do you remember old school dinners the curry sauce they used over the chips - anything that tastes similar to that......

This is by far the best recipe I've ever used:

Ripe Mango (chopped into bite size chunks)
1/2 fresh pineapple (chopped into bite size chunks)
1 inch fresh ginger (finely chopped)
3 shallots (finely chopped)
3 tsp curry powder
200ml chicken/veg stock
100ml natural yoghurt

Fry the shallots and ginger for 2 mins
Add fruit & curry powder and fry for 1 minute, stirring
Add chicken stock and bring to boil then simmer for 5 mins
Stir in youghurt, cover and simmer for 5 mins

If you were going to use chicken, coat in flour on its own at beginning and cook for 5 mins, then add to the sauce when adding the youghurt.

If you were going to use veggies, part cook them and then add them in at the same time as the yoghurt.
