Aubergine, what time make with one?

I never ever cook with aubergine, but out of curiosity I bought one the other day. It’s just the one, don’t think dds would eat it, so only for me and dh. I’m not keen on moussaka, so anything else is welcome.
Roasting it, adding it to something? I’d like to love it as a vegetable and experiment.
I’ve a pretty full pantry and lots of different meats and fish in my fridge freezer.

Aubergine parmigiana is lovely

I only ever do moussaka or that, I cannot get over the idea that it's going to be slimy in anything else!

I cut it into extra thin layers, paint olive oil on, season well and then griddle all the slices before using.

Cut it up and make a ragu type pasta sauce. My kids eat it disguised in that.

I mean onions, aubergine, garlic fried. Add a tin of chopped tomatoes or two, a table spoon of balsamic vinegar and some chopped basil. simmer for an hour or so. You can add in other stuff like chopped bacon and peppers.

Pasta a la Norma is delicious. Or cut in half length wise, score and roast in the oven with olive oil. Once it’s soft, spread with tomato paste, goats cheese and basil and bake or grill until golden.

Really simple and easy:

Pre-heat oven to 180, chop aubergine, red pepper, tomatoes into bite sized pieces, crush a few garlic cloves, mix with olive oil, pinch of salt, black pepper. Lay out on baking tray, roast for 20 minutes, tear up a ciabatta bread into bite sized pieces and put on top, return to oven for a further 10 minutes. Serve over rocket with oil/vinegar/mustard dressing.

What Bumble says - roast it with tomatoes (and any of the following- courgette,peppers, onions, sweet potato).

This would be lovely mixed with feta cheese, for example, and/or lentils.
Maybe a squeeze of lemon if you have it.

I agree with @FlowerArranger. I've also once had barbecued aubergine. It was lovely. Apparently you soak it in salty water for the day and throw it on. Might actually buy one just for the next bbq

This Roasted Aubergine with Mozzarella, Chilli, Lemon and Flat-leaf Parsley is delicious. And you make it all in one roasting dish, so the washing up is minimal.

Slice it thickly lengthwise. Cross hatch one side of each slice and spread with miso paste, working it into the flesh. BBQ til toasty and serve sprinkled with spring onions

Make Babaganoush! An excellent word, and a tasty dip.

I hate aubergine normally, but a babaganoush with a sprinkling of smoked paprika is lovely.
