making roast chicken for dinner

have loads of potatos

sick of roast, DH does not like mash..

have lots of broccoli, could i do some sort of bake..

inspire me, oh lovely cooking people !

Not sure if it would go with chicken dinner but my dd loves cheesy tatties

Boil tatties as normal then mash with butter and milk but make them wetter than normal, then beat an egg into them and add as much cheese as you like (we use loads of strong cheese) then bake in medium oven until top goes golden.

Even if you don't fancy it with chicken try it sometime. It's great if dc appetite bad after illness

yes with the egg in it it rises a bit.
It is totally scrumptious

Good one we do with ... just about everything

It's an Antonio Carluccio dish, we call it Monks potatoes

Cut potatoes into large wedges
Slice onions
Sprigs of rosemary
Olive oil
Seasoning

Add sliced spuds and onions to a roasting dish, pour over olive oil, add rosemary sprigs, season to taste scrunch all together and roast til tender.

It's lovely with roast chicken

Bake the potatoes. cut chicken up in pieces. slice potatoes in 4 (not through).

throw chicken pieces over potatoe.

Make a cheese sauce - smother potatoe and chicken with cheese sauce.

Gratin dauphinois goes really well with chicken particularly if you put lots of garlic cloves in the chicken

how do i make dauphinoise

or can i slice potato and cover it with grated cheese?

I always have this with roast chicken, it goes perfectly with it.

Sliced onion
lots of garlic
thin-ish sliced green pepper.

Fry in olive oil until soft

Add in par-boiled potato slices and sautee on a medium heat until cooked (about 20 mins).

Gorgeous and not too much faffing.

Butter a dish

Thinly slice the spuds

Layer them with grated cheese and crushed garlic

Keep layering till you stop with a layer of cheese and add milk down the side of the dish

The amounts are as follows

1 lb of potatoes ...i am old skool with measurements lol
2 oz grated cheese
1/2 pint of milk

oven 180 or gas 4 for one hour

The nicest spuds ever and kids love them too!
