If I make fairy cakes today, Sunday, will they be stale by Friday? Or fit for taking to nursery?

Any views? They're for dd to take to nursery for her birthday (she'll be FOUR, how tf did that happen?) and I just can't face the idea of baking on Thursday night and wondering about making them now. TIA.

Would they freeze?

I think that they might get a bit stale by the end of the week

You can freeze them if they're plain. If you want icing etc you will have to do that the night before when they have defrosted.

Ah, that's a good idea, I could freeze them and just ice them on Thursday night, that would be do-able. Thanks MB, good idea.

yes I freeze fairy cakes all the time, well not all the time that woud be bizzarre and perhaps slightly democic but you know what I mean.

When ever I make fairy cakes I make double quantity and then freeze half so they are there for a fairy cake emergency!

freeze without any topping on though- am not sure how icing etc stand up to freezing.

(if you ever need to do it again and don't want to freeze, muffins keep much better than sponge and you can still make them fairy cake size)

Buy them? Buy them? It took 2 seconds to make them (MUST do, TSAP makes them ALL THE TIME )

Nigella's fairy cakes
put 125g sr flour, butter and sugar in a mixed
add 1 tsp baking powder, 1tsp vanilla essence, 2 eggs
whizz until it's a smooth batter, add a bit of milk in the top of the blender

cook for 15 mins
