Please share your tastiest and easiest pressure cooker and slow cooker one pot recipes. Vegetarian and vegan preferably as when DH cooks he does meat and when I cook I do vege/ vegan so we balance each other out. I've got an almost 2 year old and a 2 week old so when DH is back at work I'm seriously worried I'm going to struggle to put a meal on the table for us all. These need to be toddler friendly so can't be spicy! I need to be able to thrown a bunch of ingredients into a pot with minimal effort and turn it on to cook Smile

I love African peanut stew. It’s a couple onions, a couple of large sweet potatoes, a ton of tomatoes, 3 heaped tablespoons of peanut butter, ginger, chilli and garlic. I usually add spinach just at the end. This is filling enough to eat on its own or great with a bit of crusty bread. It doesn’t seem to matter whether you cook it for 2 hours or 8 hours.

I meant to say you can dish out and add the chilli at the end if you have a toddler. It might be ok without, I haven’t tried.

Diced red onion, chunks of butternut squash, chickpeas and chopped tomatoes with some garlic paste and fresh or dried thyme, and some vegan bouillon powder (Marigold) I'd add some smoky paprika (you can add this at the end if you think your toddler won't like it) and maybe a spoonful of brown sugar, molasses or honey.

Ideally fry the onion first but if you don't have time, just put them in the slow cooker for 3 hours

Serve it with couscous or rice or crusty bread.

Have you thought about traybakes as well? Easy to do meat/fish & spicy stuff in a separate dish if necessary.

I'm sure it could be done with tofu, or perhaps haloumi.

This tomato risotto is cheap and easy to make, and absolutely delicious, I just reduce the liquid down to adapt it for my multicooker. Have made it over and over, and will often do a double batch then freeze leftover portions for work lunches. (I always replace cherry tomatoes for regular ones and don't notice a difference)
