Recipe with fresh coconut

Hi, my son has brought home a coconut and I have some more grated coconut meat in the freezer. What can I do with it? Savoury or sweet recipes welcome. Thanks!

I remember having beautiful fish dishes on honeymoon, fish cooked in coconut in Fiji. Something like this

I haven't got any fish at home. Ideally, I'd prefer veggie recipes to use up what I have in the fridge.
