Help! No tomatoes, red meat, nuts or stoned fruit

But pine nuts (pesto) is ok.

We have friends coming over for a bbq on Saturday, but it's now forecast to rain all day.

One friend is v allergic to tomatoes, nuts, aubergine, stoned fruit and she also doesn't eat red meat. Salmon, chicken, dairy is all fine.

Oh and I'm working most of Saturday 🙄.

Any ideas please? Something v straightforward, ideally that I could make the day before?

I'd bake a side of salmon or salmon fillets with some pesto, do a green salad of chopped cucumber, celery, defrosted peas, mint, dressed with extra virgin olive oil, lemon juice salt and pepper. Feta optional.

Serve with lovely bread or buttered boiled baby potatoes, or potato salad.

Option - put the boiled baby potatoes in a roasting tin with broccoli/asparagus for 15 mins.

You can make the salmon and potatoes ( & broccoli asparagus) the day before, and then the salad is just a quick chop, dress and mix.

Why not do a Chicken Korma - you could make the day before and it would taste even better the day after!

Marinade and spatchcock a chicken for the bbq, serve with yogurt dressing, salad, couscous and tabbouleh.

THANK YOU!!! Loads of great ideas, that has made it much easier. I think I'm going to go with a side of salmon (and gammon incase anyone's not keen on fish), new pots, couscous, salad and probs roast veg. An easy, summery meal.

And pavlova afterwards. With edible flowers too on the pavlova because I really fancy poncing it up!!

Just double check potatoes- I’ve got a feeling tomato/aubergine allergy is a solenoid allergy and that potatoes have solenoids in them.

I might have made that up though!

I made Bombay Chicken last night (the whole roasted one on the bbc good food website). My son had a friend over and they both loved it, as did we and my fussy 10 year old!
You could marinade it the night before then while it's cooking make up some salads to go with it. Nb it has tomatoes in the sauce but you could omit those.
