Packed Lunch Ideas

Hi All

My kids are doing holiday club most days over the holidays and I need some inspirations for their lunch boxes? They normally have a cheese wrap and would eat that everyday - but I'm after Ideas so I'm not sending them with the same thing everyday!

Before the start of a new school term, I try to batch cooking some freezable lunchbox fillers. There are the best, according to my dc:

If they like wraps, you could make some interesting "hidden veg" pancakes to use as the wrapper instead of a tortilla. e.g. today I made some pancake mix that was bright pink because I pureed a (non-pickled) beetroot into the batter. A couple of weeks ago I made some bright green pancake batter by pureeing a packet of rocket into the mix. You make the pancakes nice and thin and then make their "normal" cheese wrap and they enjoy the colour change but it tastes pretty much the same as their normal lunch.

Pesto pasta (I add chicken or sausages or any leftover meat from their dinner too)

Houmous and falafel wraps

Muffin pizzas (toast muffin, add tomato puree and mozzarella then bake for 10 mins to melt)

Sausage rolls (I don't do this too often as they are high in saturated fat)

Egg sandwiches

Mini ploughman's lunch

Things mine will eat for packed lunches:

Savoury muffins
Mini taco quiche/ wedge of Spanish omelette
Cream cheese filled sweet peppers
Cheese and veg/fruit skewers
Pasta salad
Cold pizza pinwheels or quesadillas
Frozen yogurt or smoothie
Veg sticks, falafel, breadsticks with dip - cream cheese, pesto, hummus, bbq sauce etc
Veggie cocktail sausages/sausage rolls.

Frittata slices or cubes.

Potato salad with diced ham, chicken, sausage, hot dogs etc.

Samosas.

Spanakopita.

DD's favourite is the left over taco or fajita mix folded in to a tortilla parcel and baked.

@CMac79 you can add cheese too. Just fold a tortilla wrap with whatever filling in to a little parcel and it bakes semi crispy. Very tasty. I do it with leftover chilli and bolognese too
