Roast Chicken Salad Recipe?

I've been given a huge frozen chicken by a neighbour - don't ask 😁 and was thinking I will probably roast it whole then serve with a salad of some description (still pretending it's summer even though it's wall to wall rain).
Has anyone got any simple but tasty ideas of what might go well with roast chicken?

I usually do some sort of Caesar salad but with little roasted potatoes and maybe some griddled asparagus

You're sorted for meals until the autumn according to MN legend aren't you? GrinConfused

I like to serve with jacket spud and coleslaw and a standard mixed salad.

Also some sort of noodle soup or special fried rice with leftovers.

Oh lucky you! Gifted neighbourly chicken Grin

My favourite salads using chicken include a US-style Cobb salad - simply grilled chicken on a bed of cos and butterhead lettuce, with all sorts of delicious accompaniments such as crispy bacon bits, avocado, tomato, crumbles of blue cheese, hard-boiled eggs, avocado etc - whatever you want/have. It's such a substantial meal (not necessarily the healthiest!) and looks beautiful, with each component lined up in rows on the bed of lettuce.

Secondly, I love a Mediterranean-style lemony chicken salad with flatbreads or focaccia to bulk it out if needed - this recipe is great https://www.recipetineats.com/lemon-chicken-salad/.

My go-to is with pesto pasta, cherry tomatoes and mozzarella pearls.
Coronation chicken is also a hit www.bbcgoodfood.com/recipes/easy-coronation-chicken

I was also going to suggest Coronation chicken, also Delia's chicken, grape and tarragon salad is lovely

Thanks everyone, in the end I went for new potatoes and Delias grape and tarragon salad which was so refreshing and delicious!

Sadly it must not have been one of the MN chickens as it only lasted 2 meals (my oh is a big eater and the cat & dog got their cut too Grin)

Roast chicken is great with salads.
I either do chicken + new pots + tomato salad
Caesar salad
Panzanella
Fatoosh
( the last two don't need potatoes )
It's quite a regular meal for us
