Davina McCall’s sugar free flapjacks always seem to be talked about, but the Healthy Flapjacks recipe by Sneaky Veg is my favourite! I swap the sunflower oil for coconut oil (warm it through a little first so that it’s runny) and often leave the dried fruit out. These have much less butter than some of the recipes too, but all my family love them!

The result was a beautifully light cake with some colour. I replace the jam with St Dalfour jam (naturally sweetened with grape juice) and give the buttercream a miss.
