Frozen veg meals

I seem to have accumulated various bags of frozen veg that are in my garage freezer.

Do any of you have some good ideas and recipes for using them up please? Tia

Veg curries: saag paneer, blinding bhaji( I use broccoli as well as okra if I have some to use up), aloo gobi, mutter bhaji,
If you have green beans make a nicoise salad.
Soup
Any veg with a cheese sauce can be used to stuff pancakes, jackets etc.

You can make a chickpea curry then stir all kinds of frozen veg in at the end, but especially frozen spinach, cauliflower or green beans. For the chickpea curry I just use a basic recipe with a tin of tomato puree, a tin of coconut milk, garlic, root ginger, Garam massala, coriander powder and turmeric powder and some red chillies.

Alternatively you could do fried rice, with peas and sweetcorn, usually very popular in my house.

Shove them all in a white sauce (add white wine or mustard or lots of herbs) and shove a lot of mashed potato on top.

Peas beans carrots corn mainly. I love the sound of blinding bhaji 😂. I might get some paneer..nice idea thanks.

Peas can go in pretty much any sauce type thing - chilli, bolonese, curries, pie-fillings - just make sure to add them towards the end of the cooking time.

Frozen carrots are great for soups

Sweet corn and pea pakoras

Mix into a thick batter with some gram flour (or even just plain), spices and water.

Shallow fry. Yum!

Sweetcorn fritters -
mix flour, diced red onion, chopped chilli, whatever spices you want, sweetcorn, egg - drop into the frying pan in little patties and fry both sides until golden. Eat with sweet chilli sauce.

Mattar paneer to use up peas

Peas in a risotto (and broad beans too if you have any)
