Sourdough starter help please!

Having another go with the dreaded sourdough! Followed a recipe and now have a jar of starter but it just wont rise. I've got bubbles, it smells ok - fruity. It went a bit acetoney last week so i now feed it every 12 hours, and it now looks and smells good but as i say it just never rises. Any advice welcome. It is now 2 weeks since i started and would be nice to get to actually bake some bread at some stage 🙄

What and how much are you feeding it? And where is it kept? Eg somewhere warm or quite cool?

If it’s bubbling that’s a good sign. Definitely let us know how much you’re feeding, where you’re keeping it, what kind of flour you’re using etc, there may be things you can tweak, but honestly I think mine took longer than two weeks when I first started it. It might just need more time.

Thank you for the replys. I actually woke to 1/2 cm of growth this morning so maybe things are starting to improve?
I now feed every 12 hours, i discard all but 25g of starter, i add 50g water at 28degrees and 50g bread flour ( mostly white with a small amount of wholemeal). I had been leaving it on my kitchen counter but its not the warmest so for the last 2 days it has been in the cupboard next to my oven.

That all sounds fine - I’d maybe just give it a bit more time as it can really vary depending on so many things; the age of the flour, the natural yeasts in the air in your kitchen etc Mine took closer to 3 weeks to get going.
I highly recommend the Bake with Jack website and YouTube - he breaks it down to make it a lot simpler
