Help...BBQ salads

Hi, we're having a family birthday BBQ tomorrow and I feel like I do the same boring things over and over. Please can you give me tips for salads etc to make it a little more interesting than normal. Thanks

I roast some butternut squash and add goats cheese to mine, makes it very luxuriant!

Think about constrasting textures as well so soft beetroot with crunchy nuts.

Or use salad veg you've seen but never used, thinly sliced radish is my go to now rather than boring cucumber!

Roast sweet potato, olives, feta and pine nuts or sunflower seeds on a bed of greens. Topped with balsamic dressing

Grilled sweet corn mixed in a bowl with 2 tbsp olive oil, half red onion chopped, fresh mint and then sprinkled with some feta cheese... yum

Potato salad, can dress it up by adding peas/ham/apple

Waldorf salad: celery, apple, grapes and walnuts with half half mayo/yoghurt dressing

Chickpea salad: chickpeas, feta and chopped up veg (red pepper, red onion, cucumber, celery, radish, tomato, avocado or whichever combo of these you’ve got!)
Dressed with lemon juice and oil

Beetroot with feta or goats cheese and baby spinach or rocket. Good with seeds or nuts in

Courgette and radish salad - use a peeler to slice courgette into ribbons and slice radishes thin, toss with vinaigrette

Chicory walnut and blue cheese - dressing with oil, vinegar, grainy mustard and honey

Baby plum tomatoes, red onion, mint, lemon, olive oil. Make a few hours in advance and keep in the fridge to let the flavours develop

Also I bloody love Asda's Ranch Coleslaw Kit - it's basically like naked coleslaw in a bag with a sachet of ranch dressing to mix through it and some little crumbly things, I eat it by the bagful.

@Classica I also agree on that broccoli slaw! It's delicious. Don't knock raw broccoli salads until you've tried them!

Barbecue a load of sliced aubergine (on first is good. Doesn’t need the high heat meat does)
Make up a dressing of soy sauce, rice wine vinegar, sesame oil, chopped coriander. Plus a spoon of peanut butter if you fancy.
Put cooked aubergine and dressing into a wide bowl and leave to marinate/cool

Tabbouleh

Beetroot and orange in balsamic

Julienne veg - pepper, carrot, onion, baby corn, courgette and small cauliflower florets in a vinaigrette

Mustardy potato salad.

A decent Russian salad.

Greek salad
