What can I make with "coconut drink"?

I accidentally bought coconut drink instead of coconut water. It is a milk substitute and seems to be made of at least 90% water, 6% coconut cream and some other ingredients.

I don't drink milk (eg I don't have cereal, put milk in tea etc) but I do really like coconut. Has anyone cooked or baked with this before? Any recipe suggestions? Thank you!

Smoothies?

YelloYelloYello · 18/06/2021 10:50

Pina coladas!

Yeah, pina colada or smoothie with banana and mango. You could add a bit of ginger, possibly some mint

I imagine it has the consistency of milk, so wherever you'd use milk I guess.
Pancakes maybe, with fruit for breakfast.

Or, with a stock cube, as a base for soups, particularly Asian types.

Porridge with banana added?

I use this to make overnight oats with almonds and fruit for breakfast.

I use that specific brand to make green thai / keralen coconut curry. I tried to bake with it & make white sauces but it’s a bit too thin; so if you try that make sure to add more solid coconut oil / cream.

Instead of milk in rice puddings

I think I used similar from a different brand in a satay sauce in place of coconut milk.

I ended up making semolina with it. Disappointed it didn't taste of coconut Sad
