Low effort but tasty Sunday lunch ideas

I've invited my dad and step mum for lunch Sunday, was planning on doing a bbq but heavy rain is forecast. I don't fancy cooking a roast , does anyone have any simple but nice go to recipes please?
Maybe a tray bake could work?

This is my go to low effort dinner when i can’t be arsed and it is amazing! I always get loads of compliments and have shared the recipe with quite a few people now

Mary berry has a sausage tray bake we all like, can speed it up by par boiling the potatoes and lightly grilling the sausages.

A lovely salad, boiled potatoes (serve with finely diced dill, good quality salt, and lashings of butter) and minute steak (I will sometimes use a quick marinade of olive oil, balsamic vinegar, salt, pepper, Worcester sauce, dijon mustard - best part is marinade can go on when you take the steak out of the fridge an hour before cooking.

You can do the salad in the morning, then the potatoes go on when your family arrives, then pan fry steak (in cast iron grill pan if you have one) about 10 minutes before you want to eat. Steak takes a few minutes to cook, then rest, and slice. And serve!

Ooh these sound lovely. This is my go to for people round for lunch and easy to prep in advance then just whack in the oven. Tray bake chicken thighs, fennel, lemon, shallots & garlic served with buttery new potatoes and green salad. Really tasty and simple:

Thanks for all the ideas, i will be trying them for future easy entertaining.
I cooked an extra tasty roast in a bag chicken with Mary Berry double potato daupunoise (made in advance and finished offfor 30 mins while chicken resting) with green beens tossed in butter. A success!
And of course the weather forecast was wrong and it was glorious sun so I could have done a bbq ConfusedGrin
