Lowish carb mostly veggie lunch ideas

I wonder if I can pick your brains. I'm looking for ideas for lunch that I can make in advance (ideally 2-3 days worth at a time) that are not bread/pasta or couscous based and are more interesting than roasted veg with feta. I don't eat a lot of meat and don't always have access to a fridge so ideally things that can cope with a few hours out of the fridge. I feel like I'm missing something obvious but I'm all out of ideas, but desperate to stop spending so much on lunch at work, and lose a few pounds too.

Oven baked falafel, salad and yoghurt dressing
Chickpeas and cauliflower with curry spices baked and serve with salad chopped mango and yoghurt dressing.
Sliced beef tomatoes, mozzarella, red onion and basil salad with balsamic vinegar.
Crudités with hummus, guacamole and salsa
Salad with pear, blue cheese and walnuts

Quite a lot of salads though! Should be ok in insulated lunch bag with ice pack.

I make a salad with leaves, home baked beetroot (tastes nothing like that plastic wrapped stuff), feta and walnuts. Also vinaigrette.

Jacket potato with salads /hummus/cheese/eggs. Can also use sweet potato.

Homemade soups.

Make 2 or 3 salads then have a bit of each salad each day. Less boring than just one.

I saw an idea on here of using an omelet as a wrap. So just make an omelet, let it cool then make up with cheese or salad, egg mayo and tomatoes or whatever.

Alors, you can always take a good low car snack for later on, such as:

Cottage cheese
Hard boiled eggs
Apple sauce
Nuts
Peanut butter and an apple
Greek yog
Berries, but depends how low carb you're going.

Burrito bowl. Most have rice but you could leave it out or use cauliflower rice instead.

Lentil salad. Easy to change up with different veg and probably nicest at room temperature.

Vietnamese rice paper spring rolls. I put sliced veg and tofu in the middle (can add sliced omelette, lettuce, spring onions, radishes, carrot, avocado, anything) and dip them in a homemade soya sauce-sesame oil-garlic-ginger sauce.

Two soups I make for work are: a tomato one based on Jamie Oliver's chili con carne recipe. Essentially, I just leave out the meat and beans and blend it.

The other one is vegetables and red lentils. Onion, carrot, celery and courgette which I chop finely in the food processor. Sweat this down with olive oil. Add stock, washed red lentils and a couple of tomatoes. Simmer for 25 mins
