Quick vegetarian dinner ideas for a hot evening

Could I have some ideas please, for veggie dinners for tonight while it's very hot weather. I work all day so will pop to the supermarket when I finish, but with kids activities, it needs to be start to finish ready in around 30 minutes. I'm totally out of inspiration that doesn't involve pasta! No bbq as we had one last night, and without switching the oven on. Thanks!

sautéed spring veg (broad beans, asparagus, mange tout, brocollini) topped with burrata or fresh mozzarella and a pesto drizzle with tomato bread (baguette grilled, rubbed with garlic and tomato then drizzle really good olive oil). My kids love this.

Chilli beans with halloumi and couscous/ salad

Couple of tins of mixed bean salad (or just mix up chickpeas, kidney beans etc
1 or 2 tins chopped tomato
Add a bit of chilli or chilli flakes
Grill halloumi cheese
Can also add green salad
Make couscous with veg stock

If you can prep in advance (stick the oven on while you do other things) jacket potatoes with cold fillings and salad?

Halloumi/quorn nugget wrap with salad and sweet chilli sauce/Mayo.

Black Bean and mushroom wraps.
Frittata (red onion, courgette, tomato, peppers, chilli)
Chickpea curry and chapattis
Broccoli and cashew stir fry
Hummous, olives, fresh bread, tomatoes, garlic cloves etc

Vegetarian hot dog / sausage in baguette or roll with salad or veg sticks
Pitta stuffed with falafel, hummus and salad
Pizza and salad (involves oven...)
Tofu and veg stir fry with noodles and a peanut sauce
Veg and halloumi kebabs with rice/ salad
Veg Curry made with chickpeas or lentils or beans. Make curry in advance and reheat. Serve with naan or rice

I've taken to sauteing a load of veg....... onion, pepper, mushroom, courgette, asparagus, baby corn...... drizzled in olive oil and herbs. Then let cool slightly, and spread over a massive green salad then top with crumbled feta. Served with greek flatbreads, it's amazing and so so simple.

Salade Nicoise without the tuna. Buy ready cooked new potatoes, hard boil some eggs.

Mushroom burgers, use fried large Portobello mushrooms instead of burgers.

Cheese board with added salad, celery, grapes, pickles etc.

My summer go tos (all with a big pile of salad):
Quiche
Baked potatoes
Puff pastry tart (So many different toppings e.g. spinach & feta)
Veggie sausages
Veggie burgers
Falafel & pitta
Fajitas with halloumi
Cous cous salad
Veg omelette/fritatta

Also
Veggie sausage & spinach pasta
Grilled fish (we are pescatarian)
Salmon fishcakes
Pea and prawn spaghetti

I had a gorgeous goats cheese, beetroot, and walnut salad yesterday with croutons.

You could throw that together in 5 mins for the salad and 10 minutes to warm the goats cheese.

Thanks for all the ideas. I've decided to make polenta with loads of fried mushrooms.
