What can I make with 4 punnets of cherry tomatoes?

Due to a veggie box oversight I have a fridge brimming with cherry toms, anyone got a good recipe for them?

drizzle with olive oil and roast in the oven. are they on the vine? if so leave them on - it looks really nice

Sweet + sour sauce recipe - double or treble quantities as required!
This is great with fish or prawns

2 tbsp oil
3 shallots, sliced
2 garlic cloves, crushed
2.5cm/1in piece fresh ginger, cut into matchsticks
225g/8oz cherry tomatoes
30ml/1fl oz red wine vinegar
30g/1oz caster sugar
50ml/2fl oz tomato ketchup
1 tbsp Thai fish sauce

TOMATO AND ROSEMARY SOUP
Ingredients:
1 tablespoon olive oil
1 onion
1 clove garlic, finely chopped
1 tablespoon rosemary, finely chopped
1 tablespoon tomato purée
500g fresh tomatoes, skins removed and cut into quarters
½ litre fresh vegetable stock
400g tin of cannellini beans, reserving a few as a garnish

Method:
Heat the olive oil in a large saucepan and cook the onion over a low heat until softened.
Add the garlic, rosemary and tomato purée and cook for a further minute.
Add the tomatoes and stock. Bring to the boil, then cover and simmer for 15 minutes.
Add the cannellini beans and cook for another 5 minutes.
Blend or liquidise the soup until smooth. Sieve soup.
Reheat if necessary and serve. Garnish with the reserved beans.

Serves:
Makes about 4 large bowls of soup.

Soup and freeze it? BIL makes a fantastic one - usual stuff, onions, garlic, celery, rosemary - add cannelini beans after you've defrosted it.

stir fry wiht garlic and coraiander as a side dish wiht say.. a chop

i would do fresh tomato sauce for pasta, nice with anchovies too!
(onion, basil, olive oil)
or even roasted tomato sauce (a la nailpolish)

Roast them with garlic then stir into a white risotto. Yummy!

Have you got any Chicken or Sausages?

I did a fab chicken dish and sausage ragu thing from JO's at home book and I had to use alot of cherry toms for it.
Plus whats left is even more tasty the next day.

We used a heap of them at the weekend there making a fresh salsa. Was be-a-utiful.

Chopped sweet cherry toms, red onion, coriander, peppers, fresh chillis and a splash of oil.

Just pour over a little bit of olive oil, some balsamic vinegar and lots of leaves of basil or spinach and a pinch or two of rock salt. Leave to soak for a couple of hours then get munching
