Where do you buy your flour for breadmakers?

Just bought a bread maker as trying to reduce our intake of ultra processed food. Where do you buy your flour for your breadmakers? Ideally I want to buy it in bulk but I also want good quality stuff. Thanks

Standard strong bread flour from lidl its decent. Aldi for the wholemeal flour because for some reason lidl doesn't sell wholemeal.

I use Allison's from Sainsburys, or their own brand of extra strong. And I add a couple of tablespoonsful of vital wheat gluten from Buywholefoodsonline.

Plus we mix with Doves organic flour

We have a bulk food store near us where we buy stoneground whole wheat, bread flour, spelt flour, and several others I use for things like pizza dough etc. I also get all purpose flour for regular baking like cakes.

I also use vital wheat gluten in some whole grain recipes to ensure a good rise and crumb.

We are in Canada so the flour names may be different. But bulk places reduce packaging and can be fresher because of turnover.

And the seeded one from Sainsbury’s looks very convenient, @Onestep2021 - my breadmaker has a nut dispenser - do I just ignore it in this case and put the seeded flour in all at once?

I had no idea about adding vital gluten, @ThatLibraryMiss and @LoveFall but sounds like that is the way forward for wholewheat breads, which are my preference

Do you all slice your bread by hand or do you have a slicer to get them more even? Any recommendations please?

We don't have a slicer. We bought one but didn't like it so sent it back. We do have s really good breadknife. DH is awesome at slicing bread, me not so much so I just muddle along.

The gluten does make a difference. The protein molecules create a "scaffolding" that forms a sort of support for the yeast action.

There are lots of good recipes online. We use a wholegrain recipe on the Bob's Red Mill site. Very good,

For cutting, I use a Victorinox bread knife that seems to have been discontinued but Harts of Stur have similar ones. I thought my old bread knife was good until I got the Victorinox one.

We have a local bakers who does home delivery for things like flour. Maybe you have something similar nearby?

If you're into bulk buying this yeast is very good (not necessarily from Amazon). You can keep a smallish amount in the fridge and keep the rest in the freezer.

Shipton mill is great, their soda bread flour and swiss dark flour have a particularly lovely flavour. We get a few bags of those along with big sacks of malthouse and organic white, so we can mix and match.

Hi @Onestep2021 I tried the seeded whole meal flour from Sainsbury’s but it came out undercooked, albeit very tasty. I am wondering if I used the wrong programme (menu 5). What programme do you use for it please? Or did you mix it 50-50 with another flour? Would love to try it again as it seems like a lovely flavour. Thanks
