Am completely t-total and even though alcohol burns off in cooking prefer not to use it.

Any suggestions to what I can use as a substitute for red and white wine, beer and brandy?

Usually use stock but there must be something else!

Red wine or cider vinegar? clutches at straws

depends what you are cooking/what flavours.
a little balsamic vinegar works well in many recipes.
Upping spices and herbs and garlic and onion and crumbling flavoured stock cubes.
Reducing sauces to concenntrate flavours.
