Jackfruit ideas

I picked up a couple of tins of jackfruit today (in brine in case that makes a difference). Have never tried it before so would love some suggestions of what to do with it - pulled 'pork' seems the obvious one but would be nice to try something different as well. Thanks :)

The Bosh "pulled pork" is quite tasty, rinse it well before you use it and be careful with adding salt as it can be quite salty.
