Need an impressive looking but hard-to-cock-up vegetarian meal for 6 people - any ideas?

Catering for two couples next week. Both are amazing hosts and we've never had them over before so I feel quite a lot of pressure to cook something amazing. They are all vegetarian and my veggie repertoire is very narrow and not at all fancy - can anyone suggest something that ticks those boxes and can, ideally be mostly prepared in advance so that I'm not faffing in the kitchen the whole time the guests are with us? I make a big pan of red lentil Bolognese with lots of garlic and use this to make a lasagne the normal way. It's really delicious and if you stack it high it looks impressive too. Served with a crispy green salad on the side.

I usually make the ice cream with lime marmalade or curd for a bit of twist...and there's no need for an ice cream maker if you beat it a couple of times during the freezing process.

Quick update for those who are interested. I thought I'd trial run a few recipes and started with this one from the Anna Jones website:

The DC weren't massively enthusiastic but I really liked it and it looks very pretty. Was thinking of doing that plus:

  • lemony lentils with griddled halloumi
  • rocket and lambs lettuce salad with pine nuts and veggie parmesan
  • some nice bread (there's a Turkish shop close by that does lovely stuffed flatbreads with spinach etc)

Then a white chocolate and raspberry cheesecake (as per recipes ahead) to follow

Those sound yummy Op! I had halloumi fries the other day and they were delicious, so thinking of recreating them at the weekend!

Love the sound of the cheesecake for dessert!

I know you've chosen your menu OP but I've made this a few times... it's fiddly but tastes amazing and you can't really go wrong with it. It's perfect for summer with a huge salad and flatbreads.
