Please help me with my meal plan - quick, healthy and vegetarian!

I'm starting a new job soon, and it's likely to be quite full on, so I'm keen to put together a really good 4-weekly meal plan. I do most of the cooking, but teen dd will cook once a week. DH rarely cooks, but does most of the cleaning and gardening before anyone asks why he isn't pulling his weight. Smile

There are 3 of us. I need some good ideas for healthy, satisfying meals that can be knocked up really quickly at the end of a busy day - ideally within 20 mins but half an hour would be fine. We don't eat meat, and we try to avoid having too much processed food, though we do rely on it sometimes.

I am quite prepared to do some batch cooking but freezer space is limited, so I can't rely on that too much. We also have a slow cooker that I rarely use, but I guess it could be put into action.

Current family favourites include lentil dahl and various other curries and a couple of warm pasta salads.

I'm so out of inspiration...please help!

Chilli - I love chilli. Use bulgar wheat instead of any soya or lentils.
Summer is coming so loads of salads (feta/walnuts, eggs/potatoes/beans, aparagus/Parmesan)
Griddles tofu/veggies with rice
Spanish omelette and salads
Frittata
Pasta - macaroni cheese, broad bean/pine nuts, red sauce
Pizza (I have a really good recipe for the base that takes ten mins and it really works)

My DD (16) cooks from time to time, usually grilled halloumi or falafel with homemade tzatziki, salad and flatbreads and/or sweet potato wedges seasoned with za'atar or a cheese and tomato risotto.

We tried out Hello Fresh on an offer earlier in the year and found that really helpful for incorporating some new ideas that DD could cook.

She also does great chicken satay skewers so I guess you could tweak that and do veg or quorn ones.

Congratulations on your new job. Try looking at the website Healthy Living James. One of my regular meals from there is Sweet potato and black bean stew. Often swap ingredients around in it such as replace kale with spinach or use a different pulse. Just depends what I have around. Great for batch cooking and reheating.

We're not veggie but both my teens ask for these fajitas. Both can cook them as well. Plus they are ready in 15 mins.

We swap the sour cream for mayo though, just because that's usually what we've got in Smile

Dale Pinnock's Eat Shop Save books are full of really tasty, easy recipes and most are ready in 30 mins. I have just started working my way through his new 8 weeks to better health one - it's got a whole section on veggie and vegan recipes. They are cheap to buy too - highly recommend!

Roasted veg is so easy. Chop up veg and stick in the oven for half an hour.

Roasted squash, fennel garlic and lemon with Cous cous
Roasted pepper, aubergines, onions and tomato with pasta
Roasted veg with veg sausages and salad.
Roasted cauliflower with pan fried gnocchi, butter and sage
Roasted pepper and onion, then add a tin of tomatoes and some sliced Haloumi and return to oven. Serve with bread and salad.

A go to for me when I just can't be bothered is spaghetti, olive oil, lemon juice, garlic, grana padano, lots of salt and pepper and mushrooms. Nothing cooked apart from the spaghetti. It is amazing and takes the amount of time to cook the pasta. I do it to taste.

We love mushroom halloumi pesto burgers:

  • Put big mushrooms upside down on baking sheet
  • put pesto in the middle (and hot sauce if you like spicy)
  • grill for 5-10 minutes
  • add halloumi slices on top of each mushroom
  • grill for another 5-10 minutes
  • pop into a bread roll (we like granary for texture)

Then serve with whatever sides you like, for a speedy option we do a tomato salad with olive oil and sea salt. Sometimes I make potato wedges and do the whole lot together in the oven instead of grilling.

Even our veg-hating 6 year old tucks in to these so they must be a winner Grin

we do a warm salad with roast veggies, lentils and halloumi which is tasty and super easy. but basically roast whatever veggies you fancy (usually mushrooms, peppers and red onion here) for 25 mins. then add halloumi wand cherry tomatoes. and roast for another 15 minutes. take out oven, stir in packet of puy lentils, and serve in a bed of baby spinach with balsamic dressing

Qaesadillas with a quick salsa

Quick sweetcorn fritters with a salsa (I like salsa!!!)

Main course nachos - make nachos and top with fried onions, peppers and warmed through black beans, sweetcorn etc

Pasta pesto with some roasted or fried onions, peppers, mushrooms / can stir some spinach in at the end too

Mushroom stroganoff is really quick and can be served with microwave rice and some salad leaves

Veggie hotdogs with corn on the cob and salad

Greek salad, pitta, tsatziki and those bought tins of Greek giant beans = one of my favourite quick and easy meals.

Once upon a chef French lentil salad if you cook the lentils the night before
Nachos using a Mexican gram mix - can also have sane mix as burritos or on top of jacket potato

pasta puttanesca (leave out the fish/sausage!) takes around 15m and is so tasty - tomatoes, garlic,chilli, olives, yum!

Pasta primavera, a mix of green vegetables eg green beans, peas & asparagus tips, or broccoli florets, sugar snaps & courgettes, stirred into pasta.

Pasta Sicilian, add sliced fried aubergine to rich tomato sauce to heat through while your spaghetti cooks.

Salade Niçoise without the tuna.
