Need to eat better, so plan to have at least three meals a week that are basically salad, at least whilst the weather is warmer.

What are your favourite filling salads?

Herb salad - usually parsley and mint- with tomato cucumber and quinoa. Can add halloumi.

Chopped salad, usually rocket, tomato, peppers, sweetcorn, avocado, olives, basil and pine nuts.

Lambs lettuce, thinly shaved fennel, pear, dried cranberries, walnuts

Grated carrot, quinoa, chopped pistachios, raisins and a soy/sesame oil/lime/ginger dressing

Most salads I just do a balsamic dressing with.

Love fruit and nuts in a salad, and following with interest!

I make a nice Asian slaw with shredded cabbage, carrot, spring onions, coriander and soy beans for protein. Dressed with lime, soy, sesame oil and a touch of honey or sugar.
It's usually in the side of satay chicken but you could use aubergine or similar

Tabbouleh
There are. A few on minimalist baker that a great, the best (imo) being the chickpea schwarma salad and harrissa carrot salad

I made this the other day and it was a life saver because it was so quick and I really didn’t want to cook in this heat www.sacla.co.uk/blogs/recipes/rice-salad-peas I added some mozzarella pearls and cherry tomatoes

My current fave is
Cooked quinoa with a packet of chopped basil, a jar of (or homemade) roasted peppers, a pack of fried halloumi and toasted pin nuts. I dress it with some oil from the peppers and 1-2 whole squeezed lemons. Delish. It lasts well in the fridge and makes loads

@KihoBebiluPute that salad makes six generous portions! I make it for an evening meal for two hungry adults and there’s enough for lunch for me for the next couple of days at least.

I cook 80g quinoa and leave to cool then drizzle small amount of olive oil and lemon juice over. Add some fresh pomegranates and chopped up pepper and fresh mint.

Quinoa is such a good starting point. I do one with a tin of drained chickpeas coated in Ras el Hanout, chopped cucumber, pomegranate seeds and a splash of lemon juice all in with the quinoa.

I made a really delicious salad the other day. But it wa a a lot of faff.

Pomelo flesh, roasted peanuts, freshly and finely sliced red onion and green collies. Fresh coriander leaves and a light lemon and salt drizzle.

It was amazing! I paired it with a simple apple, green leaves, walnut and fresh sheep cheese salad.

Two salad is in one go felt quite decadent 😊

I also love the watermelon, mint and feta one! Usually I eat half the watermelon as I’m slicing it 😃

It works well with musk melon as well

Butternut squash roasted in the oven with red pepper, with cooked quinoa, raw baby spinach leaves and raw halved plum tomatoes. Serve with Harrisa. Very nice!

Last week I made a salad with: lambs lettuce, some mixed baby leaves, boiled new potatoes, steamed green beans, radishes, and smoked salmon filets (warmed and broken up). The dressing was made with creme fraiche (I hate mayo but this was delicious!), lemon juice, evoo and chives. You can replace the salmon with boiled eggs or some kind of white bean. DS and his dad have asked for it this week.

I also like making tabbouleh and eating it with a proper feta or just mixing in some chickpeas to bulk it out. Unfortunately family not so keen on it, probably due to the sheer amount of parsley it involves.

Also: I look at the M&S salads (ready to go?) for inspiration, they do a supergreen one with edamame beans that I keep meaning to copy the ingredients of after eating... Always forget in the post-prandial haze!
